Ingredients (Makes ~12 balls)
- 1 cup Medjool dates (pitted)
- ½ cup almonds (or walnuts, cashews — your choice)
- 2 Tbsp unsweetened cocoa powder
- 1 Tbsp peanut butter or almond butter
- 1 tsp vanilla extract
- Pinch of sea salt
- Optional: shredded coconut or crushed nuts for rolling
Instructions
- Prepare the dates – If dates are dry, soak them in warm water for 10 minutes, then drain.
- Blend the base – In a food processor, combine dates, nuts, cocoa powder, peanut butter, vanilla, and salt. Blend until sticky dough forms.
- Shape the balls – Scoop about 1 tablespoon of mixture and roll into a ball. Repeat until all dough is used.
- Coat (optional) – Roll balls in shredded coconut, cocoa powder, or crushed nuts for extra flavor and texture.
- Chill & store – Place in the fridge for 30 minutes to firm up. Store in an airtight container in the fridge for up to 1 week.
